The Bonefish
The Bonefish belongs to the Albulidae family. The maximum size of the bonefish is 104 cm and the maximum weight is 10 kg. They can live up to 10 years. It breeds from November to May. It can be fished all year round. Many fossil remains, several million years old and dating from the dinosaur era, show that the tarpon has the particularity of having changed very little during its long existence. It can be recognized by its streamlined body covered with large silver scales and its mouth with a prominent lower jaw with many small pointed teeth. These characteristics seem to have inspired the different appellations attributed to it according to its geographical distribution: "Silver King" in America or the "Great Scale" in the West Indies.

The Red Grouper belongs to the Serranidae family. The Red grouper reaches a maximum total length of 125 cm and a maximum declared weight of 23.0 kg. Red Groupers are thought to have a lifespan of about 25-30 years. They breed from January to April. It is abundant at the end of summer. The red grouper is a robust, medium-sized fish. It has large eyes and differs in size, the anterior pair being slightly smaller than the posterior pair. Pelvic fins are shorter than pectoral fins. The pelvic fins are inserted behind the pectoral fins on the body. The red grouper has scales and thick skin at the base of the dorsal and anal fins. The caudal fin is truncated and the caudal peduncle has no saddle. The head and body of the red grouper are dark reddish brown in color, then fading to pink or reddish on the sides and ventral side. Light-colored spots may be observed scattered over the body and small black spots may be present around the eyes. The anal, dorsal and caudal fins have dark margins. When the fish is resting, the coloring becomes more split, resembling the Nassau grouper.

The Dolphinfish belongs to the Coryphaenidae family. Its length can reach a maximum of 2 m, but the average length reaches 1 m. Its average weight is 14 kg but it can reach more than 30 kg. It has a maximum lifetime of 4 years. It can reproduce all year round. The best time to catch it is from April to June. There are two species of dolphins. It is easy to distinguish the two species. They both have the same elongated and spindle-shaped shape. The single dorsal fin extends over the entire length of the body. The anal fin begins approximately in the middle of the body and ends at the same point as the dorsal fin. Pelvic fins are located under the pectoral fins and can be compressed into a shallow groove in the body. The caudal fin is strongly forked. The head is dull and the mouth contains many small teeth, as well as a small oval dental patch on the tongue. Cycloid scales cover the body. Mature males exhibit dimorphic sexual growth and develop a prominent bone crest at the front of the head. The color of the dolphinfish is quite dramatic with golden shades on the sides, irregular spots of metallic blue and green on the back and sides, and whites and yellows on the underside. This fish is very colorful underwater, captures light and reflects a wide range of bright colors.

The King Mackerel belongs to the Scombridae family. The king mackerel is a medium-sized fish, generally weighing between 5 and 14 kg, but weighing more than 40 kg. Females can live up to 14 years, and males up to 11 years. It spawns from May to September. It can be fished from April to December. Unlike other members of Scombridae, mackerel do not have a black area on the front of the first dorsal fin. The mackerel king has 12 to 18 spines in his first dorsal fin; 15-18 rays in the second dorsal fin, followed by 7-10 pinnacles; and 21-23 rays in the pectoral fin. Its body is about five times larger than its head and about six times longer than its depth. The whole body is covered with rudimentary scales, except for its pectoral fin. The lateral line drops abruptly after the second dorsal fin, then continues to the tail, distinguishing it from red mackerel (Scomberomorus regalis). The king mackerel also lacks scales on the pectoral fins, as does the Spanish mackerel (Scomberomorus maculatus), unlike the red mackerel which has scales extending over the pectoral fin. The king mackerel is a silver fish with indistinct bars or spots on the side. The dorsal surface is black with iridescent tones of blue and green. Young fish have small bronze spots on 5 or 6 irregular rows.

The Queen Snapper belongs to the Lutjanidae family. It can measure up to 1-meter-long, however, it is rare to cross specimens larger than 60 centimeters. In general, juveniles weight between 5kg and 6kg, which are the most frequent catches. It has a lifespan of 8 years. It reproduces throughout the year. It can be fished all year round. Identifying the queen snapper is not difficult, since even other morwongs do not look like them. Sometimes, however, they can be more silvery than blue. They have yellow lines around the head, a long filament on the pectoral fin and blubbery lips make the snapper distinctly identifiable.
